- Meats: 8 oz (225 g) breakfast sausage (pork or turkey) casing removed
- Vegetables: 1 medium red bell pepper diced , 1 small yellow onion diced , 1 cup baby spinach chopped
- Tortillas: 6 large (10-inch) flour tortillas
- Pantry & Spices: 1 tbsp olive oil , 1/2 tsp salt , 1/4 tsp black pepper , 1/2 tsp chili powder (optional)
Instructions
- Step 1:
- In a large skillet over medium heat, add olive oil. Sauté onion and bell pepper for 34 minutes until softened.
- Step 2:
- Add sausage and cook , breaking it up , until browned and cooked through , about 56 minutes. Drain excess fat if needed.
- Step 3:
- Stir in chopped spinach and cook for 1 minute until wilted. Transfer mixture to a bowl and set aside.
- Step 4:
- In a mixing bowl, whisk eggs, milk, salt, pepper, and chili powder (if using).
- Step 5:
- Pour eggs into the same skillet and scramble gently over medium-low heat until just set but still soft. Remove from heat.
- Step 6:
- Warm tortillas in the microwave for 20 seconds to make them pliable.
- Step 7:
- Assemble the burritos: On each tortilla, layer egg mixture, sausage and veggies, and sprinkle with cheese.
- Step 8:
- Fold in the sides and roll up tightly.
- Step 9:
- To freeze: Wrap each burrito tightly in foil or parchment paper, then place in a freezer bag.
- Step 10:
- To reheat: Microwave unwrapped burrito for 12 minutes, or bake in a 350°F (175°C) oven for 20 minutes from frozen.
